Coconut Chocolate Chip Cookies - Butter Free!!!

If you guys haven't realized it already, I am a sucker for sweets!  I have such a sweet tooth, so I am always trying to find healthier version of almost everything!  When I came across these chocolate chip cookies and learned that they were butter free, no white sugar added I was all in!  These are made with coconut oil instead of butter, and are crazy delicious!   

  • 1/2 cup coconut oil
  • 1 cup + 1 TBS brown sugar, packed
  • 2 eggs (or 1/3 cup egg whites)
  • 1 TBS. pure vanilla extract
  • 1 3/4 cup all purpose flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 12 oz. dark chocolate chips                   
  • 1.5 cups shredded coconut (optional)
1.  Preheat oven to 365 degrees F.  Spray a cookie sheet.

2.  In a mixing bowl, use a mixer to beat the the coconut oil and brown sugar.  Add in the eggs and beat until fluffy.  Add in the vanilla extract. 

3.  In another bowl, combine the flour, baking soda, salt and baking powder with whisk.  Mix the flour mixture into the coconut oil mixture.  Add in the chocolate chips + coconut and mix well.  

4.  Drop by small rounded spoons onto prepared baking sheets. Bake for about 9 minutes or until slightly browned around the edges. 
         
5.  Cool on cookie sheet for a few minutes before removing to rack to cool completely.  Store in air tight container to maintain freshness!

Peplum Black Dress

Happy Tuesday! Here is a work fashion find I am loving, I found this peplum dress from on online shop called Boohoo and I absolutely love it.  If you haven't checked out this website you should; they are really budget friendly and have some great items to choose from! 


For work I usually pair this dress with a nikibiki bandanna underneath to minimize cleavage.

Skinny Strawberry Banana Ice cream

Happy National Ice Cream Day!! Try this super healthy and yummy strawberry banana ice cream with added super green supplement. 
Ingredients:

  • 3 ripe bananas
  • 10-15 strawberries
  • 1 tsp of vitamineral green powder
  • chocolate chips for topping (optional)

Slice bananas and strawberries into smaller pieces and put in freezer until frozen.
 Once your fruit is completely frozen, add all ingredients to food processor and blend until creamy!  
Top with chocolate chips and enjoy!

Must-Have Wedding Pictures & Detail Tips

Since wedding season is upon us, I thought I'd post some simple detail ideas and must-have wedding pictures! Now yes, these are from my wedding so I may be a little biased, but I think moments like these should definitely be captured for every bride and groom!  

Detail Tips:

The garter - remember you need 2, one to keep and one to toss.  Mine were both hand made and my keep garter was made from parts of my mother in law's wedding veil, using special fabric or material is a great way to make something more special!  


 Card House!  My dad had this made for us since the money we received from our wedding was put into a savings account to go towards our first home!

 Escort card table - Add details with a simple lace fabric and some pearls (you could also use tulle, mirrors or flower petals)!  I also had a local printing company print the escort cards and it was only like $20!!  

This room had large windows which I was not fond of, so I had a local event company put up these beautiful drapes. Then after the ceremony, the drapes were the perfect backdrop for the wedding party table!   


 Cake Display - (fun note I had my cake designed to match my dress!) Also my mother in law found our cake cutting/serving piece at our local goodwill for like $3!!  They had never been used and she made them more special by having our names and wedding date engraved! 

I also hired a florist for my bouquets and ceremony pieces, but to save money we did all of the table center pieces and other table decorations!  We ordered the roses from costco and my husband's aunt and grandma arranged them for me!  His aunt is SO talented she did most of my other decor as well (which saved me money in the long run, so find a crafty friend or family member to help)!

Oh I also totally recommend doing a money dance.  It was a fun way to talk to some of the guests for a few moments and also get some extra cash for the honeymoon!  I think Garrett and I got like $700 from it, which basically paid for our fun excursions in Hawaii!

I also had the photographer take some special pictures of me in my garter for just my hubby!


 The first look!  



We left a seat open in honor of my mother.  Such a special picture for me.

My bouquet was also wrapped in a piece of lace that was hers and also had a pendant with her picture.  I now have this bouquet preserved on display in my home.

Manuka Honey


Manuka Honey is my favorite honey; it's on the spendy side, but the uses and benefits make it worth it!! Manuka Honey comes from bees in New Zealand that pollinate the native Manuka Bush.  So basically all honey contains different bioactive levels and while the average honey contains very low levels the manuka honey has high levels of bioactives (the more bioactive levels in the honey the more health and medical uses it will have (superior/high levels are considered anything with 10+)).

I have found both external and internal uses for this honey and since I use it for so many different reasons the cost is easily worth it to me!  I use it as a face mask or I'll take a spoonful with cinnamon or add it to my greek yogurt, It even works for sore throats! I also give my husband a spoonful every morning for extra energy!

Its Go Time!!

Okay okay so I just had a baby 5 months ago and my sister Kelly just had one 2 months ago so we are both on a mission to get back our pre-baby bodies!  We have decided to try out the Bikini Body Guide by Kayla Itsines, its a 12 week exercise and training plan.  Kelly and I will be posting our results every 4 weeks….

On a side note nothing better then getting some new workout gear to help motivate you!  I am loving my new top and shorts from Lululemon!  If you have never shopped there then I 100% recommend you check it out, seriously high quality workout clothes!!

Black Jumpsuit

Hello loves! Here is one of my favorite pieces right now. I love this jumpsuit it is such a flawless look, and so trendy right now! I wore this outfit out with girlfriends for dinner and drinks for a night out. I found this at a local boutique here in Bend, Oregon called O Mo Mo! 


 One thing I'm always looking for when shopping is pieces I can wear for work and play! This piece paired with a cropped blazer and a chunky necklace is perfect business attire for my job.
