No Bake Energy Bites



I found this recipe on Pinterest and my whole family (including my 3 year old) loves them! I altered the recipe a little to make it even healthier!

Ingredients:
  • 1 cup old fashioned Oats
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 1/2 cup mini Chocolate chips
    • If you want to add a little crunch to your energy bites, add some whole flaxseed along with the ground flaxseed!
Directions:
Mix all ingredients together, then refrigerate for 30 minutes until chilled.  Remove from refrigerator, roll dough into balls.... and enjoy! (Store in air tight container in refrigerator)

I try to buy as much of the ingredients Organic to make these even healthier! These are great snacks, and if you have a sweet tooth like me its a healthy treat alternative!
