Greek Tortellini Salad

Pasta Ingredients:
  • Crumbled feta cheese 
  • Red onion 
  • Kalamata olives (pitted)
  • Tortellini pasta
  • Grape tomatoes  
  • 1 Cucumber
Dressing:
  • 1/4 cup virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tsp of minced garlic
  • Salt and pepper to taste
Directions:
Cook tortellini according to directions on package; while tortellini is cooking, chop up tomatoes, cucumber, and onions.  Once tortellini is done, let cool or rinse with cold water.  Place tortellini in large bowl and add the tomatoes, cucumber, olives, red onion, and feta cheese.  Next, in a separate bowl, whisk dressing ingredients together and pour over salad! If you don't want pasta, you can add these ingredients (without the tortellini) to a nice salad mix for a yummy Greek salad!
