No Pasta Cauliflower Mac and Cheese

Here is a yummy Mac and Cheese dish made with no pasta!

  • 1 head of cauliflower
  • 1 1/2 cups of cheddar cheese
  • 2oz Cream cheese
  • Splash of heavy whipping cream
  • Salt & pepper 
Cut cauliflower into smaller heads and steam until tender with fork. Next add cream cheese, 1 cup of cheese and a splash of heavy whipping cream.  Cook on low and stir until ingredients are mixed well together. Move mixture into greased baking dish and top with 1/2 cup of cheese. Bake on 375 for 10-15 min until cheese is bubbling.

**To make this meal lighter just use low fat cream cheese and cheddar cheese!!!
