Pumpkin Pie Oatmeal

This Fall I am ALL about pumpkin! Some may even say I'm addicted... but I'm okay with that!  Pumpkin is so healthy for you, its pretty low in calories, high in fiber, and rich in antioxidants and vitamins.  This oatmeal is delicious, healthy and SUPER filling! It's seriously like pumpkin pie for breakfast!!  (nutrition facts also posted below)

Ingredients:
  • 1/2 cup quick oats
  • 1/4 cup almond milk
  • 1/4-1/2 cup pumpkin puree 
  • 1 splenda, splash of honey or maple syrup  (I use 1 splenda and a splash of honey)
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tbsp walnuts or pecans (optional)
Directions: Cook quick oats as directed on container (microwave 1.5 - 2 minutes).  Add in remaining ingredients, stir and enjoy!

Fat: 8.6 grams
Carbs: 35.8 grams
Protein: 8.4 grams
