Bell Pepper Coleslaw

I got this recipe from my friend's boyfriend and it is seriously the best coleslaw you will ever have! It's so colorful and delicious. I just had to share with all of you! I should have take more pictures of it, but I was too busy eating it, lol. This would be perfect for Super Bowl Sunday... trust me you won't have left overs!!! Bellpepper

What you need:

3 TBSP sugar
Kosher salt
1/2 cup apple cider vinegar
1/2 Tsp celery seeds
1/2 Tsp mustard seeds
Freshly ground pepper
6 bell peppers (red, orange, and yellow) cut into thin strips
2 stalks celery, finally chopped
4 scallions, chopped
1/2 head of green cabbage, thinly sliced, and chopped
3 tbsp whole-grain Dijon mustard ( I use grey poupon)
1/2 cup mayonnaise

Whisk the sugar, 2 teaspoons salt, with the 1/2 cup apple cider vinegar.  Once whisked, add the celery seeds, mustard seeds, ground pepper, bell peppers, celery, scallions, and cabbage.  Toss and put in fridge for 1 hour to let the flavor develop. After 1 hour add the mayonnaise and mustard.  Refrigerate until ready to serve!
