Chia Seeds Energy Bites

I saw this yummy recipe on Super Healthy Kids. If you aren't following them already, you should! These are also similar to Kelly's energy bites post (here).  This recipe caught my eye, because I recently bought a bag of chai seeds from Costco and had been wanting to try something new with them. If you didn't already know, chia seeds have a lot of health benefits,  just 1 tablespoon of chia seeds contains 5grams of fiber, 3grams of protein, 2282 mg of Omega 3 and 752 mg of Omega 6 fatty acids. These little bites are so yummy.  They are the perfect snack or treat, even my toddler loves them!

Ingredients:
  • 1 cup oats 
  • 1/4 cup honey 
  • 1/4 cup peanut butter
  • 2 tbsp chia seeds 
  • 1/4 tsp vanilla 

Combine all ingredients together until mixed.  Add 1/4 cup mini chocolate chips. Refrigerate for 20 minutes, than shape into mini bites and enjoy!! (keep bites refrigerated in container)

  1. This looks absolutely delicious, and healthy! I can't even remember the last time I've had cookies since I've started a new very strict, very healthy, diet. My sister in law recommended that I start eating chia seeds and I've been looking for a good recipe to use them in. What better way to eat them than in protein peanut butter chia cookies? I can't wait to try this recipe out!

    1. I hope you got the chance to make these energy bites! They really are delicious! I love them cause I can eat 1 (or 2) and satisfy my sweet tooth without feeling guilty!!!
