Not Your Average Roasted Carrots...

I got this recipe from my sister Kelly, who got it from a friend, who got it from a friend (and so on).  These roasted carrots are seriously too good not to share! I make these weekly and often they are the only item my picky 1 year old will eat!!! You know they are good when your husband is requesting them and your 1 year old prefers them :)


  • 1-2 bundles of carrots (feeds 4)
  • 2 tablespoons coconut oil (melted)
  • seasoning (I just use sea salt and pepper)

Take whole carrots, wash and peel. Slice carrots as thin as you prefer them, we slice ours pretty thin. Toss carrots in coconut oil and season to taste (I just add a little salt and pepper to mine).  Line carrot's on baking sheet (lined with tin foil for easy cleaning). Bake at 375 for 25 minutes. Optional: after 25 minutes flip to broil and broil on high for additional 4-5 minutes. Remove from oven and enjoy!!!
